Salmon Croquettes (G.F.) – Sides of Salmon are seasoned, then roasted. Next we combine dill, parsley, cilantro, sweet pepper, vidalia onion, and egg, along with more spices. Lastly, we form the mixture into 3 2oz patties before they are seared on both sides. A cajun remoulade is served on the side. Enjoy with pan seared okra and tomato as well as fresh pink lady peas. $24
Grilled Peach and Chicken Caprese (G.F.) – Our grill doesn’t stop running over the summer. We’ll quarter the local peaches and grill them just before we’ll marinate the chicken breast and grill them too. As the name would suggest, we’ll toss it together with summer tomatoes and fresh mozzarella cheese. Mint, basil, olive oil and balsamic vinegar will adorn the dish. Brown jasmine rice and steamed green beans will accompany the meal. $21
Farro and Pasta Salad with Poached Shrimp – .My wife surprised me with this dish on a hot night (hot, as in temperature outside). The farro makes for a nutty and firm texture, while the pasta is soft and comforting. The two absorb a simple lemon dressing and are tossed with spinach, green onion, grape tomatoes, slivered almonds, avocado, goat cheese, and poached extra large shrimp. $21
Pomegranate Molasses Glazed Pork Loin (G.F.) – Pomegranate molasses is common in Middle Eastern cooking, Its complex flavor is combined with orange juice, lemon juice, garlic, pink and black peppercorns for a marinade. We hold back a small amount and add some chicken stock for the sauce and glaze. You’ll get small roasted potatoes and roasted broccoli and cauliflower. $21
Lasagna Bolognese – Bolognese sauce starts with ground beef, crushed tomatoes, carrot, celery, onion, white wine, parsley and milk (to balance the acidity of the tomatoes and wine). We also make a mornay sauce (bechamel with cheese) which is spread over each layer of lasagna noodles before topping those layers with the bolognese. We finish the lasagna with grated parmesan reggiano. Enjoy with a caesar salad. $21
