Ropa Vieja – Heat a skillet over medium low heat. Place the ropa vieja in the pan, cover, and heat for 4-5 minutes tossing occasionally. Wipe out the pan and place the beans in the same pan, heat for 2-3 minutes until warmed through. The yellow rice can be heated in the microwave.
Herb Encrusted Salmon – Preheat the oven to 425F. On a foil-lined sheet pan, place the salmon and tomatoes and heat for 4-5 minutes until the salmon is warmed through. Heat the polenta in a sauce pan or microwave with a few splashes of water and stir until the polenta is warm and creamy again.
Pork Carnitas Tacos – Heat a skillet over medium high heat. Warm the tortillas over a low gas flame or in a dry pan on the stove for 2 minutes each. Then, place the pork in the pan and heat for 2-3 minutes tossing occasionally. Add the cheese, cilantro, onions, and tomatoes to your hot taco.
Pistachio Chicken – Preheat the oven to 425F. On a foil-lined sheet pan, place the pistachio chicken and potatoes. Heat for 5-8 minutes until the chicken is warmed through. Reheat the green beans in the microwave for 1-2 minutes.
