Creamy Risotto with Shrimp and Snap Peas (G.F.)

Creamy Risotto with Shrimp and Snap Peas (G.F.) – Risotto makes me happy any time of year.  But I do this this version with sweet tail-off shrimp and fresh snap peas on top.  Our risotto is pretty traditional, made with arborio rice, onion, white wine and seafood stock.  We do sprinkle grated parmesan in at the end for a depth of flavor.  Enjoy with a caesar salad.  $24
