Chicken and Vegetable Stir Fry  – Heat a skillet over medium-high heat.  Place the stir fry in the pan and heat, stirring occasionally for 3-4 minutes.  Heat the rice with 2 Tbsp water in a microwave-safe bowl, cover, and heat for 1 minute.

Flank Steak with Chimichurri – Preheat the oven to 400F  Place the vegetables on a foil-lined sheet pan and heat for 4 minutes.  Add the steak and cook for an additional 3 minutes or until the steak reaches desired temperature. Alternatively, preheat a skillet over medium heat, cook the veggies for 2-3 minutes, then add steak and cook for an additional 2-3 minutes.  

Tuna Niçoise – Enjoy the salad cold.

Chicken Tinga Tacos – Preheat a heavy skillet over medium high heat.  Heat each tortilla, one at a time for 30 seconds per side, then remove.  Place the chicken in the same pan, tossing for 1-2 minutes until heated through.  Enjoy the accoutrements cold on top of the tacos.

 Sausage, White Bean and Kale Soup – Simply heat the soup over medium heat in a sauce pan until heated through.  Enjoy the chef salad cold.
